Today, I’m excited to share a recipe that will transport you to the charming streets of Milan. Get ready to indulge in the rich and tender goodness of Ossobuco, a traditional Italian dish that will leave you craving for more. 

Ossobuco is a classic Italian dish that epitomizes comfort and indulgence. With its tender meat, hearty sauce, and fragrant gremolata, this recipe will impress your guests or become a beloved family favorite. Ossobuco Recipe:


  • 4 veal shanks, about 1.5 inches thick
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 4 garlic cloves, minced
  • 1 cup dry white wine
  • 1 can (14 ounces) diced tomatoes
  • 1 cup beef or vegetable broth
  • 1 sprig of fresh rosemary
  • 2 bay leaves
  • Gremolata (optional):
    • Zest of 1 lemon
    • 2 tablespoons fresh parsley, finely chopped
    • 2 garlic cloves, minced


  1. Preheat your oven to 325°F (165°C).

  2. Season the veal shanks generously with salt and pepper, then coat them in flour, shaking off any excess.

  3. Heat the olive oil over medium-high heat in a large oven-safe pot or Dutch oven. Add the veal shanks and sear them on all sides until golden brown. This step helps to seal the flavors.

  4. Remove the shanks from the pot and set them aside. Add the chopped onion, carrots, celery, and minced garlic to the same pot. Sauté until the vegetables become tender and fragrant, about 5 minutes.

  5. Pour in the white wine and let it simmer for a few minutes, allowing the alcohol to evaporate.

  6. Add the diced tomatoes, beef or vegetable broth, rosemary sprig, and bay leaves to the pot. Stir well to combine all the ingredients.

  7. Place the veal shanks back into the pot, ensuring they are partially submerged in the liquid. If needed, add a bit more broth.

  8. Cover the pot with a tight-fitting lid and transfer it to the preheated oven. Allow the Ossobuco to braise for approximately 2 to 2.5 hours or until the meat is fork-tender and starts to pull away from the bone.

  9. While the Ossobuco is cooking, prepare the gremolata by combining the lemon zest, chopped parsley, and minced garlic in a small bowl. Mix well and set aside.

  10. Once the Ossobuco is ready, remove it from the oven and discard the rosemary sprig and bay leaves. Serve the tender veal shanks on a bed of risotto, mashed potatoes, or creamy polenta, spooning the flavorful sauce over the top.

  11. For an extra burst of freshness, sprinkle each serving with a generous amount of gremolata just before serving.
